INGREDIENTS:

For the Masala Base & Yoghurt Kadhi

1kg natural yoghurt
1 medium onion finely chopped/blitzed
4 green chillies blitzed/sliced
2 small fresh tomatoes chopped
1 Jug water (to use as and when needed)
4 tablespoons oil
3 and half tablespoons Besan (Gram flour)
1 peice each of ginger and garlic frozen cubes or 1 tablespoon each of the paste
1/2 tablespoon of the following:
salt
chilli powder
coriander powder
garam masala
turmeric powder

To make the Pakore/Onion Baajis

1 medium onion finely sliced
1.5 cups of Besan/Gram flour (375g)
1 teaspoon of:
salt
coriander powder
garam masala
1/2 teaspoon of:
chilli powder & turmeric

To make the Tarka:

2 tablespoons oil
quarter onion finely sliced
1 teaspoon cumin seeds
fresh coriander to garnish
