Ingredients-

Eggless chocolate strawberry cupcakes

1/4 up (60 g) unsalted butter, melted
1/4 cup (60 ml) oil
1 cup (200 g) caster sugar
3/4 cup milk
1 tsp vinegar
1/4 cup (60 g) yogurt
1 teaspoon strawberry extract or vanilla extract
1 tablespoon (15 ml) hot water
1 teaspoon (1 g) instant espresso coffee
1 1/4 cup (175 g) all-purpose flour
1/4 cup + 2 tablespoons (45 g) cocoa powder
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt


Frosting -
150 grams whipping cream
1/3 cup or 80 ml strawberry purée/filling/compote

Compote recipe -
125 grams of strawberries (fresh or frozen)
1 tbsp sugar
1 tbsp lemon juice
50 ml cold water

1 tsp corn flour
1 tsp water (additional)


Steps-

1. Add everything to your saucepan, except the corn flour, and the additional water
2. Turn on the heat, keep it at low, and cook the berries for 3-4 minutes. The berries will start to become really soft
3. Make a slurry of the corn flour and water and add it to the saucepan. Then cook for 1 more minute. Done
