Korean Crab Stew (게찌개)

Ingredients:
8 Blue Crab
1 medium size Korean Radish
1 Onion
1 Korean Squash
3-4 Korean Peppers
1 bundle of Green Onions
1 container of Tofu
2 tbsp of Minced garlic
1/2 tbsp of minced garlic

Ingredients for marinade:
2 tbsp of Korean Pepper Paste
2 tbsp of fermented Korean Soybean Paste
5 tbsp of Korean Pepper Flakes
3 tbsp of Soy Sauce
2 tbsp of Fish Sauce
2 tbsp of Rice Wine

Ingredients for Stock:
1.5L of Water
2 pieces of Kelp
1/2 cup of dried Shrimp

Cooking Instructions:
1. Wash the produce ingredients and prepare and cut accordingly.
2. Under running water, prepare and clean the crab using a bristled brush.
3. In a pot, pour 1.5L of water. Add 1/2 cup of dried shrimp and 2 pieces of kelp and bring to a boil. Once the broth comes to a boil, remove the pieces of kelp first. Make sure the broth has absorbed enough of the flavors from the dried shrimp. Then remove the dried shrimp.
4. Add the marinade ingredients into the prepared broth and mix thoroughly. Then add Korean radish and bring to a simmer. At this point, add the prepared crab.
5. Once the crabs turn red in color, add the garlic, ginger, onion, Korean squash and cook. Remove any foam that rises to the top surface of the stew.
6. Cover the pot with a lid and cook for 5 minutes. After 5 minutes, add tofu, green onions, Korean peppers and cook for an additional 5 minutes. Serve and enjoy a delicious meal of Korean Crab Stew!!!
