CATCH & COOK: Flounder Belly (Sashimi) + Barracuda Attempt

Wish the weather would have held up. My judgment said to turn around with the pending 3 mile hike unfortunately. Trolled the tubes on some wrecks with three missed hook ups. The result was some t-boning from big cudas. Boat traffic and seas made things a little sketchy so we had some crabs and we worked a wreck quick. Landed a 21" flounder to have for dinner and headed back to the car.

I filleted the fluke normally and skinned the belly strips. I made the marinade which consisted of the following:

2/3 cup soy sauce
2/3 cup water
1/4 cup sugar
Bring to a boil, reduce + simmer then cool

Sliced the ingredients to palatable sizes and added fresh onion, lemon, and jalapeno. Pour the marinade, cover and refrigerate for 3 hours. Lot of salt so take it easy on over doing it.
