Donuts Recipe :

400 gr Tepung Komachi
100 gr Terigu Segitiga Biru
5 gr Baker Bonus A
2 ge Ibis Blue
1/4 Biji Pala
60 gr Gula Pasir
6 gr Ragi
3 Kuning Telur
150 gr Susu Cair UHT Full Cream
75 - 80 gr Air dingin
60 gr Unsalt Butter
8 gr Garam

Glucose Syrup Recipe :

120 gr air suhu ruang
180 gr gula pasir
1/3 sdt cream of tartar cap koepoe koepoe

Mirroring Glaze Recipe :

160 gr Air Suhu Ruang
125 gr Gula Pasir
185 gr Glucose Syrup
205 gr White Corvette 28% Callebaut
15 gr Gelatin
105 gr Susu Kental Manis
1 sdt pemutih makanan (titanium dioxide foodgrade)

1/2 sd 2 sdt Taro Powder
1/2 sd 2 sdt Matcha Powder
1/2 sd 2 sdm Chocolate Powder (kami menggunakan merk tulip bordeaux)
1 sdm Vanilla Ekstrak
1/2 sd 3/4 sdm pewarna merah
