Chickpea nuggets. Meatless and Iron Boosting. Get ready for these cheesy, crunchy and tasty nuggets. A great idea for a quick lunch loaded with protein. I served the nuggets to the kids with some cucumbers and tomatoes as a side and I added them on top of a buddha bowl salad for me with lettuce, tomato, cucumber, brown rice, edamame. One family = one meal!
