Biscotti is a classic Italian bar cookie. A bar cookie is a type of cookie that is baked in one large loaf and then cut into individual bar servings. Biscotti means “twice baked” in Italian. These cookies are baked in a loaf at 350 degrees F, cooled and cut into inch wide servings, and then baked again at 310 degrees to brown and dry. This basic dough can be used with different inclusions (eg: chocolate chips, dried fruit, nuts, candied citrus) and shaped to various desired sizes. The dough in this video was shaped smaller for petit fours service.
