Smoke 'em if ya got 'em!
This Horizon Smoker is a wonderful choice for the back yard BBQ aficionado. It has the functions and controls to achieve great fire management. I recommend 2 or 3 pieces (5"x3") Cherry or Oak in firebox every 20 min (depending on wind and outside temp maybe one more or one less if colder or windy). Your goal is to maintain no higher than 250-300 on the right side. Use the damper on the firebox to control draft and keep a flickering flame happy. Not a smolder. I keep my chimney draft full throttle open 90% of the time when I BBQ. I only drat it back when it is winter and I am needing to hold in heat.
