Pad Thai

Ingredients - Always use 100% Organic, Non-GMO ingredients for your Health and the Planet!

Boiling water for the noodles

1 10-oz. package Pad Thai noodles
2 Tbsp. olive oil
2 cloves garlic (minced fine)
1 14-oz. package Nasoya extra-firm tofu, drained and cut into chunks
4 Tbsp. Tamari
2 Tbsp. peanut butter
Juice of 2 limes
3 Tbsp. Coconut sugar
Sriracha, to taste
1 cup spinach (washed)
1 cup steamed, or blanched broccoli
1/2 cup red bell peppers (blanched - optional)
1/4 Cup Chopped peanuts
Instructions
Bring a large pot of water to a boil
In a large frying pan, or wok heat the olive oil over medium heat. Add the garlic and tofu. Let it cook, slightly brown on all sides. Drop in 1 tablespoon tamari over the tofu and sauté until golden brown.
In a bowl, whisk peanut butter, lime juice, coconut sugar, remaining soy sauce, 1 cup of water and set aside.
Cook your noodles for 10 minutes in a tablespoon of olive olive. Stir gently. Do Not Overcook! Mushy noodles suck.
Place in a strainer and drain your noodles of all extra water
In a large bowl place noodles, sauce, tofu, fold in spinach, Siracha, broccoli and peanuts. Mix gently and thoroughly. Enjoy the shit out of it!

Serves 4
