Ingredients:

For 1st Marination:
1 kg chicken (cut into medium-sized pieces)
1 tbsp garlic paste
1 tbsp ginger paste
2 tbsp lemon juice
1/2 tsp black pepper powder
1 tsp salt

For 2nd Marination:
2 tbsp red chili powder
1 tbsp coriander powder
1/2 tbsp turmeric powder
2-3 tbsp strained yogurt (dahi)
2-3 tbsp musters oil

For the Gravy:
4-5 tbsp oil
4 large onions (finely chopped)
6-7 green chilies (slit)
3 large tomatoes
1 large piece of butter
2 small cup yogurt (dahi)
1 tsp salt
1 tsp garam masala powder
1 tsp black pepper powder
1 tsp spicy red chili powder (adjust as per taste)
1 tsp turmeric powder
2 cup of water
1 tsp kasuri methi (dried fenugreek leaves)
Salt to taste
1-2 tsp fresh cream

Instructions:

1st Marination:
1 tablespoon garlic paste, add 1 tablespoon ginger paste, a little lemon juice, and half a tablespoon of black pepper powder. Mix everything well. Add a little salt and cover it. Let it sit for 30 minutes.

2nd Marination:
2 tablespoons Kashmiri red chilli powder, 1 tablespoon coriander powder, half a tablespoon turmeric. 2-3 tablespoons strained yogurt, and 2-3 tablespoons mustard oil. Mix everything well and refrigerate it for at least 30 minutes If you want, you can keep it for 1-2 hours which will make the chicken even more tender.

To prepare the gravy:
Heat the required amount of refined oil in a pan, then add 4 medium-sized finely chopped onions. Add 6-7 green chilies and 3 tomatoes cut into 2 pieces each. Sauté until they soften. Sprinkle a little salt to help everything soften quickly. Once soft, let it cool down and then grind it in a mixer and strain it.

For Roast the Chicken:
Heat oil in a pan and add a large piece of butter. Once the butter melts, fry the marinated chicken on low heat. After frying one side, turn it over. Fry it well on both sides. When the chicken turns golden brown, remove it from the pan and set it aside.

Making the gravy and Cooking of the Chicken:
Now, heat a little oil in a wok, add a large piece of butter, then add the ground masala from the mixer and sauté it a bit. After that, add 2 small cups of yogurt and mix well. Add one teaspoon of salt, one teaspoon of garam masala, one teaspoon of black pepper, and one teaspoon of spicy red chili powder, and mix everything well. Add a little turmeric and cook the masala until the oil separates.

Then, add 2 cups of water. When the water starts boiling, add the fried chicken and cook on low heat for 10 minutes.

Finally, add a little Garam Masala, Kasuri Methi, and a bit of Fresh Cream, and give it a gentle stir. Your roasted butter chicken is ready to serve.

Optional Tandoori Flavor:

Heat a piece of charcoal until red hot. Place a small steel bowl or a piece of foil in the center of the pan with the gravy.
Place the hot charcoal in the bowl, pour 1 tsp of ghee over it, and immediately cover the pan with a lid. Let it sit for 2-3 minutes to infuse the smoky flavor into the Butter Chicken.
