Lemon rice is an easy to prepare variety rice dish. It is a very popular main course dish in South India. People usually prepare this dish using left over rice. This lemon rice recipe is very easy; it is done by mixing rice with lentils, peanut and lemon juice.

🧺 INGREDIENTS
Basmati Rice (ബസ്മതി അരി) - 2 Cups (400gm)
Water (വെള്ളം) - 2 Litre
Salt (ഉപ്പ്) - 3 + 1½ Teaspoon
Cooking Oil (എണ്ണ) - 2½ Tablespoon
Mustard Seeds (കടുക്) - ½ Teaspoon
Black Gram / Urad Dal (ഉഴുന്ന്) - 1 Tablespoon
Split Chickpea Lentils (കടല പരിപ്പ്) - 1 Tablespoon
Peanuts (നിലക്കടല/കപ്പലണ്ടി) - 2 Tablespoons
Dry Red Chillies (ഉണക്കമുളക്) - 2 Nos
Green Chilli (പച്ചമുളക്) - 2 Nos
Ginger (ഇഞ്ചി) - ½ Inch Piece
Curry Leaves (കറിവേപ്പില) - 2 Sprigs
Asafoetida Powder (കായപ്പൊടി) - ¼ Teaspoon
Turmeric Powder (മഞ്ഞള്‍പൊടി) - ¼ Teaspoon
Lemon/Lime Juice (നാരങ്ങാനീര്) - 2 Tablespoons
Coriander Leaves (മല്ലിയില)
