Full written recipe for Restaurant Style Dal Makhani Recipe
Dal Makhani Ingredients
Cooking Dal
1/2 cup Red Kidney Beans / राजमा (Wash & Soak for 5-6 Hour)
1 cup of black gram / काली उरद दाल (Wash & Soak for 1/2 Hour)
Salt
1 Cinnamon Stick (दालचीनी)
5-6 Bay Leaf (तेज पत्ता)
2 Cloves (लौंग)
Water
Tadka
3 tbsp oil
Pinch of Asafetida (हींग)
1 Cup chopped onions (प्याज)
2 tsp chopped garlic (लहसुन)
1 tsp ginger (अदरक)
1 Dried red Chili (सूखी लाल मिर्च)
1 tsp chopped green chili (हरी मिर्च)
1/2 Cup Chopped Tomatoes (टमाटर)
1 Cup tomato puree (टमाटर प्यूरी)
1/2 tsp Turmeric Powder (हल्दी पाउडर)
1 tsp coriander powder (धनिया पाउडर)
1 tsp Kashmiri red chilli powder (कश्मीरी लाल मिर्च पाउडर)
1/2 tsp garam masala (गरम मसाला)
1/2 tsp red chilli powder (लाल मिर्च पाउडर)
1/4 Cup Fresh Cream (क्रीम)
1 Cup water
Salt as per Taste
1 tsp Kasuri Methi (कसूरी मेथी)
Method
In a pressure cooker add black gram, red kidney beans, salt, Cinnamon Stick, Bay Leaf, Cloves, water & keep it for 2 whistles on high flame and 3 whistles on low flame.
In a pan add oil, onions, ginger, garlic and cook for 3-5 Minutes until onions turn golden brown.
Than add Dried Red Chilli, Green Chilli, Tomatoes, Tomato Puree, Turmeric Powder, Corainder Powder, Kasmiri Red Chili Powder, Garam Masala, Red Chili Powder and fresh Cream and cook until oil seprates.
Check if the dal is cooked and add it to the tadka
Add water, salth , kasuri methi and cook it for 10-15 minutes.
In other pan add butter, red chili powder and pour it over dal and add coriander and fresh cream.
Dal Makhani is ready to be served!
