How to Make Vegetable Khichdi (Parboiled Rice + Dal) – Simple & Flavorful

🌾 Vegetable Khichdi Ingredients | वेजिटेबल खिचड़ी सामग्री
1. Ingredients (सामग्री):
2. Parboiled Rice (भुजिया चावल / सेला चावल) – ½ cup
3. Yellow Moong Dal (पीली मूंग दाल) – ½ cup
4. Chana Dal (चना दाल) – 2 tbsp
5. Water (पानी) – 4 cup
6. Chopped Vegetables (कटी हुई सब्जियाँ) – Gobi, Raw Banana, Pumpkin, Carrot, Baingan, Green Peas
7. Tomato (टमाटर) – 2 large
8. Onion (प्याज़) – 1 small
9. Ginger (अदरक) – 1 tsp, chopped
10. Garlic (लहसुन) – 1 tsp, chopped
11. Ginger-Garlic Paste – ½ tbsp
12. Turmeric Powder (हल्दी) – ½ tsp
13. Red Chilli Powder (लाल मिर्च) – 1 tsp
14. Coriander Powder (धनिया पाउडर) – 1 tsp
15. Cumin Powder (जीरा पाउडर) – ½ tsp
16. Garam Masala – ½ tsp
17. Cumin Seeds (जीरा) – ½ tsp
18. Bay Leaves (तेज पत्ता) – 1–2
19 Asafetida (हींग) – ¼ tsp
20. Fresh Coriander (हरी धनिया) – for garnish
21. Ghee – 2 tbsp
22. Mustard Oil (सरसों का तेल) – 1 tbsp
23. Salt (नमक) – as per taste
🍲 Vegetable Khichdi Cooking Method (Step-by-Step in English)
Step 1:
Wash the parboiled rice thoroughly and soak it in water for 2 hours.
Step 2:
Similarly, wash the moong dal and chana dal and soak them for 2 hours as well.
Step 3:
Chop all the vegetables (like cauliflower, raw banana, pumpkin, carrot, eggplant, and green peas) and keep them ready.
Step 4:
Heat mustard oil in a pressure cooker. Once hot, add ghee.
Now add cumin seeds, bay leaves, and a pinch of asafoetida (hing).
Let them turn slightly golden and aromatic.
Step 5:
Add chopped ginger and garlic and sauté until they turn light brown.
Step 6:
Next, add onion and cook until golden.
Then add ginger-garlic paste and sauté for a minute.
Step 7:
Add chopped tomatoes, salt, and all dry spices (turmeric, red chilli powder, coriander powder, cumin powder, and garam masala).
Cook the masala until the oil separates.
Step 8:
Now add all the chopped vegetables, soaked rice, and dal.
Mix everything well and sauté for 1 minute on high flame.
Step 9:
Pour in 4 cups of water, mix well, and close the lid of the pressure cooker.
Cook on medium flame for 2 whistles.
Step 10:
Once the pressure releases naturally, open the lid and gently mix the khichdi.
Add some fresh coriander and a spoon of desi ghee on top.
Serve hot and enjoy your flavorful, healthy Vegetable Khichdi! 😋✨
