VANILLA CHIFFON CAKE RECIPE

Cake Ingredients:
6 egg yolks
220g cake flour
100g caster sugar
1 tsp baking powder
1/2 tsp salt
180 ml milk
120 ml vegetable oil
1 tsp vanilla extract

Meringue Ingredients:
6 egg whites
1/8 tsp cream of tartar
100g caster sugar

1. Preheat oven to 150 degrees Celsius. (130 degrees Celsius convection oven)
2. In a bowl, whisk together all dry ingredients: cake flour, sugar, baking powder and salt.
3. Add in yolks, milk, vegetable oil and vanilla extract. Mix, then set aside.
4. In another bowl, make the meringue. Put the egg whites in, then add cream of tartar. While whisking, gradually
add sugar. Whisk until fluffy and stiff.
5. Fold in half of the meringue into the batter until mixed thoroughly.
6. Fold in the rest of the meringue and mixed thoroughly.
7. Pour into a 23cm or 9inch diameter tube pan.
8. Bake at 150 degrees Celsius for 55 minutes. (130 degrees celsius for convection oven)
