Peach caprese salad is a beautiful way to celebrate two of summer's best fruits – peaches and tomatoes. You can make this recipe with any stone fruit. You can make a serving for one or a platter for a party. This salad is amazing and I've been making it every week since peaches came into season. This is a perfect side dish for a summer BBQ.

INGREDIENTS TO SERVE 4
500g Peaches or other stone fruit
500g Tomatoes
250g Fresh mozzarella or burrata
25g Basil
45ml Olive Oil
15ml Balsamic Vinegar
Salt to taste

Slice the peaches, tomatoes, and cheese to even thickness – about 1/4". Slice the basil leaves into ribbons. Arrange on a platter and drizzle on olive oil and balsamic. Add salt to taste.

For a single serving for lunch, use 1 peach, 1 medium tomato, and 75g of cheese.
