Hello, foodies! welcome back to my channel. Today, I will Explore mouthwatering classic dish from Bihar - Fried litti chokha! and how to make it extra special, I will show add a twist with roasted chana (gram) within make without roasted tomatoes and potatoes!" So let's get started!

Here's what I will need -
Chokha recipe :- Ingredients

3 medium - Potatoes (boiled)
3 medium - tomatoes ( boiled)
1 medium - chopped onion
5 garlic cloves - (chopped )
3-4 chopped green chillies
1 tbsp - chopped green coriender leaves
2 tsp - mustard oil
Salt to taste
mix well all ingredients.

For litti stuffing :- Ingredients

2 cup - sattu ( roasted gram flour)
2 medium chopped onion,
3-4 chop green chillies
4-5 chop garlic cloves
1/2 inch - piece of Ginger (chopped)
1 tbsp - chopped coriander leaves
2 tsp - mustard oil
1 tsp - lemon juice or pickle
1 tsp - ajawan ( carom seeds)
1 tsp - Kalonji (Nigella seeds)
Salt as needed

To fry litti -
Oil for deep frying

For litti Dough :-
2 bowl - wheat flour (Atta)
2 tsp - oil or ghee
1 tsp - ajwain and Kalonji.
Salt to taste
water for Kneading-

Litti preparation :-

First of all take a wheat flour in a bowl and add all ingredients to the bowl one by one like 1 tsp ajwain and Kalonji with added 2 tsp oil & little amout of salt mix with hands, gradually pour water and knead Smooth dough with cover and set it aside.
Now take a roasted chana ,grind in into coarse powder. mix roasted chana powder with spicies in a bowl - add finely chopped ginger and garlic ,chop green chillies and add chopped onion with chopped green coriander leaves then add of for the flavor 2 tsp of oil and lemon juice or pickle , now finally add ajwain and kalonji, then adding salt to taste & mix thoroughly to make a dry filling.pinch a portion of the dough & flatten It. add 1-½ tsp filling in the center.fold and seal tightly, shaping it into a flatten ball. repeat for all portions.
Heat oil in a deep pan over medium heat.
Gently drop the litti's into the oil.
Fry until golden brown, turning occasionally for even cooking.
Remove and drain on paper towels.

Chokha preparation :-

In a bowl, add mashed boiled potatoes and tomatoes as the base mix with:
Add finely chopped onions ,garlic paste or chop garlic with chop green chillies, chop green coriander leaves & must should be added some mustard oil for good flaver with add salt and a dash of lemon juice.
Mash and mix to combine.

Arrange the golden-brown litti's on a plate with a bowl of chokha on the side.
Garnish with fresh coriander.
