Sabudana Pudding (Kheer) Recipe
This Navratri, Try The Creamiest Sabudana Pudding!
Vrat ka khana doesn't have to be boring! When the sweet craving hits during Navratri Vrat, this Kesar Sabudana Pudding is your perfect companion. It’s a healthy, rich, creamy, and delightful pudding, perfect for a light dessert or a fasting meal.
Ingredients:
1 cup sabudana (medium-sized tapioca pearls)
500 ml full-fat milk
1 tbsp melted ghee
Pinch of saffron
½ cup sugar
⅛ tsp freshly ground green cardamom powder
1.5 cups mixed fruits (e.g., orange, banana, grapes, apple, pomegranate)
Instructions:
Rinse sabudana 2-3 times until water runs clear. Soak in water for 1-2 hours, covering pearls by ½ inch. Drain well.
In a saucepan, bring milk to a boil.
In a wok, heat ghee and gently sauté the soaked sabudana for 2 minutes. Add milk and saffron.
Bring to a boil, then reduce heat and simmer, stirring often, until sabudana is translucent and the pudding is thick.
Stir in sugar and cardamom powder. Cook for 2-3 minutes until sugar dissolves. Turn off the heat and let it cool completely.
Once cool, mix in the fresh fruits. Refrigerate for at least 1 hour before serving chilled.
