This Japanese tamago sando (Japanese omelette sandwich) is one of my favorite snacks from childhood. If you love soft egg sandwiches, give this one a try!

Tamago Sando | Japanese Egg Omelette Sandwich Recipe

4 eggs
1/4 cup milk
1 tablespoon mirin
1 teaspoon soy sauce
1 pinch kosher salt
1 teaspoon (or so) cooking oil
1 tablespoon butter
2 slices white bread, like shokupan
Mayo, to taste (I like Kewpie)
Grainy mustard, to taste

1. In a bowl, whisk eggs gently.

2. Optional step: Sieve the egg mixture into another bowl. (This will give you a nicer texture).

3. Add milk, mirin, soy sauce, and salt to egg.

4. In a nonstick pan over medium-low heat, heat up oil and butter. When the butter foams, add the egg mixture all at once. Using chopsticks or a spatula, mix carefully and constantly until you see soft curds. Use a spatula to roughly shape into the size of your bread slices. Be careful not to let the egg brown.

5. Generously bread mayo and mustard onto the bread. Lay down the egg onto once slice and carefully top with the other. Give it a gentle pat before slicing off the edges with a serrated knife (enjoy these scraps!).

6. Cut sandwich into your desired shape. I like mine in 4 triangles, but you can cut into 2 halves or 4 little squares. Enjoy!
