Welcome to the 12 Days of Cozy series! Each day will feature a different winter recipe (sweet, savoury or libation), craft or seasonal activity.
In Day One of 12 Days of Cozy I will be crafting a fizzy drink, a crispy pear and a savoury pork chop.

✖ EMPRESS PEAR FIZZ
(this recipe originally calls for apples, but i switched it to pear and was quite pleased with the outcome)
INGREDIENTS
1.5OZ Empress 1908 Indigo Gin
0.75OZ Fresh Lemon Juice
1OZ Spiced Pear Syrup* - see notes for syrup ingredients
Soda Water, to top
Apple Slice, Cinnamon & Star Anise, for garnish
INSTRUCTIONS: Add Empress Indigo Gin, lemon juice and spiced apple syrup to a cocktail shaker and shake with ice. Strain into an ice-filled glass and top with soda water. Garnish and enjoy!
NOTES: *To make the syrup, combine 1 cup sugar, 1 cup water, 1 chopped apple, 2 cinnamon sticks, a few cloves, and 1/2 tsp ground nutmeg in a pot over medium heat. Let sugar dissolve, stirring occasionally. Simmer for 5-10 minutes. Remove from heat and let sit for another 10 minutes. Strain and let cool. Store in a glass container in the refrigerator for up to 2 weeks.

✖ PEAR CRISP
For the filling:
3 pounds ripe Bartlett pears, diced
1/4 cup sugar
1 tablespoon lemon juice
1 tablespoon cornstarch
1 teaspoon vanilla extract
1 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/4 tsp EACH ginger, cardamom, salt
For the topping:
1/2 cup flour
1/2 cup old fashioned rolled oats
1/3 cup brown sugar
3 tablespoons sugar
1/4 teaspoon cinnamon
1/8 tsp EACH nutmeg, salt
8 tablespoons unsalted butter melted
INSTRUCTIONS: Preheat oven to 425 degrees F. Grease an 8x8 baking pan; set aside.
TOPPING: Add all of the topping ingredients to a large bowl except the butter and stir until combined. Pour in the melted butter and stir with a spatula to combine. Cover and transfer to the refrigerator while you prep the filling.
FILLING: Whisk all the filling ingredients together in a large bowl except the pears. Add the pears and stir to combine until pears are evenly coated
ASSEMBLE: Transfer filling onto prepared baking dish. Sprinkle topping evenly over the pear mixture.
BAKE: Bake at 425 degrees F until fruit is bubbling around the edges and topping is golden brown, about 30 minutes, rotating the pan halfway through baking. Transfer baking dish to wire rack and let cool until warm, about 15 minutes. Serve warm with vanilla ice cream.
