Ivo’s Veal Stew
Ingredients
• 6 – 7 TBSP Extra Virgin Olive Oil (EVOO) plus more for coating potatoes
• 1 clove of garlic, minced.
• 1 medium carrot, diced (or shredded)
• 1 celery rib (i.e. 1 stick) diced
• 1 large onion sliced thin then diced.
• 227 gm (8 oz) sliced mushrooms (alternate 4 TBSP mushroom bruschetta)
• 2 – 3 lbs. veal for stew, or veal should chops, cut into cubes.
• 1 – 1 ½ lbs. of potatoes, cut into 4 wedges, then cut wedges in half (note: you basically use half the weight of veal. i.e. if you have 2 lbs. of veal, then use 1 lb. of potatoes)
• Optional: 2 TBSP tomato paste.
• 1 cup dry white wine (alternate, ½ cup dry white vermouth)
• 2 – 3 cups of beef broth.
• Corn starch – enough to coat the veal.
• 1 – 2 TBSP paprika
• Salt to taste Optional: Black Pepper to taste.
• Optional: 1 Bay Leaf.

Process
• Add EVOO to your Dutch oven (or cooking pot) and add the garlic. Cook 30 – 60 seconds
• Add carrot, celery, onion, and mushrooms, sauté for 10 minutes
• Add optional tomato paste, mix in
• Coat veal with a light coating of corn starch, add to your pot and mix in.
• Brown the veal on all sides, then add your wine and deglaze what you can, and cook down the wine for 1 – 2 minutes.
• Toss the potatoes with EVOO, paprika, and salt to taste, add to pot and mix in.
• Add 2 – 3 cups of beef broth, and optional bay leaf. Cook with lid on for 45 minutes then with lid partially on, for 15 minutes. (You want to have some broth/gravy, but not too much that it is “soupy”) (if you notice you have run out of broth along the way, then just add a bit more beef broth)
• Add salt to taste (remember, your beef broth may contain salt, so taste it to be certain as to how much more to add, if any at all (and you can add optional black pepper to taste as well if you want)
• Enjoy with a nice fresh loaf of Italian bread (that you hopefully made with one of my recipes 😊)
