Authentic Hatay Künefe Recipe | Traditional Turkish Dessert from Antakya ✨ In this video, we take you to the streets of Antakya, the heart of Hatay, to witness the making of one of Turkey’s most iconic desserts: Künefe. Crispy golden shredded pastry (kadayıf), layered with stretchy unsalted cheese, and soaked in fragrant syrup—this dessert is a true masterpiece of Ottoman heritage. 🥘 Ingredients (Home Version – 6 to 8 servings): 500 g (1 lb) shredded kadayıf (kataifi pastry), 200 g (7 oz) unsalted butter, melted, 300–350 g (11–12 oz) künefe cheese (or fresh mozzarella as a substitute), optional: ground pistachios for garnish. For the syrup: 400 ml (1 ¾ cups) water, 600 g (3 cups) sugar, a few drops of lemon juice. 🍳 Step-by-Step Preparation: 1. Prepare the syrup: In a saucepan, combine water and sugar. Bring to a boil, then simmer for about 20 minutes until slightly thickened. Add lemon juice, remove from heat, and let cool. 2. Prepare the kadayıf: Shred the kadayıf into fine pieces. Mix thoroughly with melted unsalted butter until every strand is coated. 3. Assemble the künefe: Grease a round pan with butter. Spread half of the kadayıf as the bottom layer and press firmly. Add the cheese evenly on top. Cover with the remaining kadayıf and press again. 4. Cook the künefe: Place the pan on low heat and cook slowly until the bottom turns golden brown.
