Tomato Free Zucchini Sauce for Pasta - also Lectin-Free

On pizza, use roasted or grilled veggies instead of tomato sauce. For pasta, go for sautéed mixed vegetables, zucchini, or pesto for a tasty twist.

Tomato Free Zucchini Sauce Recipe
This I know that the name of this dish does not sound very appetizing but “zucchini mush” was the nickname my sisters and I gave my grandmother’s zucchini dish. I like it as a side dish or on pasta as an alternative to tomato sauce. This is good for people on The Gundry Diet and for people on a vegan diet.
2 tbsp olive oil
3 large zucchini, cut in ½” cubes
3 cloves garlic, peeled and cut in half
1 tsp sea salt
1 cup chopped parsley
In a shallow no-stick pan, heat olive oil and add the remaining ingredients. Sauté (stirring often) over medium-high heat until the zucchini starts to fall apart. When you watch the video, you will see that it took approximately 30 minutes.
Adjust seasoning and serve.
