A pear tart is an easy and delicious way to celebrate fall! I think pears often get overlooked for apples but they are just as wonderful! Try this simple recipe! And if you like raisins, feel free to add a few as it's a lovely pairing. It's just that Mike doesn't care for them, LOL.

1 Pie Crust (recipe below pears for 2)

Pie Crust-- (Makes 2 crusts)

1/4 C sifted flour
1 tsp salt
3/4 C + 2 tbs shortening
1/3 C ice water

I sift the flour and salt together.
Cut the shortening into the flour mixture with a pastry blender until fine rumbles. Do not overwork.
Toss while adding cold water.
Kneed until dough forms and form into a ball.
Divide in 2, roll each out.
Roll top larger.
Cut slits in top for steam to escape.

Dough can also be kept refrigerated if needed to keep for a while.

Pear Filling

1/2 c sugar
1/3 brown sugar
1/2 tsp cinnamon
3 tbs flour
3 tbs butter
1 shot rum

Pour rum over fanned out thinly sliced pears.
Knife in butter to rest of the ingredients to create a crumble.
Spread over the pears.
Bake for 30 to 35 minutes or until pears are tender at 400F.
