Today I Cut two whole chickens into halves and smoked them over Pecan Wood.

This is an awesome way to get a whole chickens worth of meat with half the cook time.

I brined these chickens overnight in
2 gallons water
1 cup brown sugar
1 cup kosher salt

I dissolved the brown sugar and salt in a stock pot over medium heat until the water was clear. Then I transferred the brine to a large Stainless Steel bowl and let come to room temp in the fridge.

Once it was at room temp, I put it in a 5 gallon bucket lined with a X Large Ziplock bag already filled with 1 1/3 gallons of water. Make sure the brine completely covers the chickens.

The next day I pulled the chicken out of the brine and cut into halves by removing the backbone, then breaking the breastbone and cutting in half.

While I was cutting the chicken I was getting my pit warmed up to 275° F.

Once the smoker was heated i threw 2 pieces of Pecan Wood on the coals. And replace the wood as it burns out.

When the chicken got to 160° internal temp,
I glazed with
1 cup KC Style BBQ Sauce
4oz peach preserves
2 Tbsp butter

Then I let the chicken cook until 170° IT.

let the chicken rest for 15 mins and Enjoy!!
