INSTANT POHA MIX
Ingredients:
•2 cups Thick Poha
•2 tbsp Oil
•1 tsp Mustard Seeds
•1/4 tsp Hing
•1 tsp Saunf (fennel seeds)
•10 to 12 curry leaves
•3 tbsp roasted peanuts (Indian variety is best for this)
•1 tbsp Sugar
•1 tsp Salt
•1 tsp Black Salt
•1/2 tsp Taatri / Citric Acid - this is optional if you can get fresh lemon / lime while making it
•2 Chillies, cut & dried
•1 tsp Grated Ginger , dried
Method:
1. Dry roast poha on a low flame. Remove and set aside to cool.
2. Now, heat oil in a kadhai. Add mustard seeds, fennel seeds, curry leaves, asafoetida, peanuts, turmeric and give a good mix.
3. Add in ginger and chillies, poha, salt, sugar and Citric acid.
4. Mix it all up and set aside to cool.
5. Store in an airtight container.
6. To make the poha, add water until the level slightly lower than the poha & cover it. Leave it for aside 7 to 8 mins and it's ready.
7. Enjoy!

Make sure the poha is well roasted
Pre roast the peanuts prior to adding
Store in an air tight container.
INSTANT UPMA MIX
Ingredients:
•2 tbsp Ghee
•1 cup Sooji (pre roasted until fragrant)
•3/4 tsp mustard seeds
•1/2 tsp Urad Dal
•Few Chana Dal
•2 tbsp chopped cashew
•7 to 8 curry leaves
•Dried Onion (1 small)
•1 tsp green chilli (dried)
•1/2 tsp dried grated ginger
•3/4 tsp salt
•1 tsp sugar (optional)
•1 tbsp chopped dried coriander
Method:
1. Heat ghee in a pan and add in mustard seeds, urad dal, chana dal, cashews, curry leaves and roast well on a low flame.
2. Add ginger, chillies, onion and roasted sooji. Give a good mix. Roast for a few mins.
3. Finish with salt and coriander. Remove from flame and set aside to cool.
4. To make upma, add in boiling hot water to the premix. Stir the contents well and cover and set aside for 7-8 mins.
5. Enjoy!
Vishesh Tippani:
Add the dried onion and immediately add sooji. Onion can otherwise get burnt. Or add it last to avoid burning.
Just make sure the sooji is well roasted when added to ghee & masalas. This is an important step.
Cool the mix & store in an air tight container
If you take 1/2 cup Upma Mix, add a little more than double of the mark of upma level. You can add more to make it a little more moist or as you like.
The water has to be boiling & ensure to cover it immediately.
INSTANT VERMICELLI UPMA MIX
Ingredients:
•2 tbsp Oil
•1/2 tsp Mustard Seeds
•7-8 curry leaves
•8-10 cashew
•2 tbsp Peanuts
•1 tsp Urad Dal
•1 & 1/2 cup Vermicelli
•2 tsp Sugar
•1 tsp Salt
•1/2 tsp Taatri (Citric Acid) - you can also later add fresh lime juice
•2 tbsp Dried Onion (Dried in sun )
•2 tbsp Dried Carrots
•1 tbsp Dried Coriander
•1 tsp Dried Chilli
•1 tsp Dried Ginger
Method:
1. Heat oil in pan, add mustard seeds, curry leaves, urad dal, cashews, peanuts and vermicelli.
2. Roast on a low flame until it turns brown.
3. Remove, cool and add salt, sugar, citric acid, dried veggies. Mix well.
4. Store in an airtight container.
5. To make the vermicelli upma, just add boiling hot water until the top of the premix.
6. Cover and leave for 10 mins and enjoy!
Vishesh Tippani:
Make sure the vermicelli is roasted well in oil. Else it will become mushy when water is added
Cool it down before adding dry ingredients
You can store this in the fridge. I recommend you remove the quantity you need a few mins prior for it to come to room temperature.
At room temperature also, it will last fine but until a month.
While making the upma, make sure the water is boiling hot. It should be bubbling in the kettle.
