INGREDIENTS:
For the Kachori Filling
2 tsp whole coriander seeds
1 tsp fennel seeds
1 tsp whole cumin seeds
1 tbsp dried fenugreek leaves
2–3 tsp red chilli powder
½ tsp black salt
½ tsp garam masala
1 tsp dry mango powder (amchur)
½ tsp black pepper powder
½ cup gram flour (besan)
Salt to taste
2–3 tbsp soaked moong dal
1 tbsp ginger-green chilli paste
Oil (as needed)
Water as required

For the Kachori Dough
400 gm all-purpose flour (maida)
1 tsp salt
3–4 tbsp ghee (clarified butter)
Water as required
Oil for frying

For the Kadhi
1 cup gram flour (besan)
½ cup curd (yogurt)
Salt to taste
Water as required
½ tsp turmeric powder (haldi)

For the Tempering (Tadka)
2–3 whole dried red chillies
1 tsp red chilli powder
1 tsp mustard seeds (rai)
5–6 curry leaves
½ tsp asafoetida (hing)
Oil
