Gujarati Khatta Moong (Green Gram) Masala Recipe

#### Ingredients:
1 cup green gram (moong), soaked overnight
1 teaspoon cumin seeds
1 teaspoon garlic chutney
2-3 curry leaves
A pinch of asafoetida (hing)
1/2 teaspoon turmeric powder (haldi)
1/2 teaspoon red chili powder
1 teaspoon jaggery powder
1/2 cup buttermilk mixed with 2 tablespoons gram flour (besan)
Salt to taste
1 tablespoon ghee

Instructions:
1. Heat ghee in a pressure cooker and add cumin seeds, garlic chutney, and curry leaves. Add asafoetida and turmeric powder, followed by the soaked green grams. Stir well.
2. Pour in the buttermilk and gram flour mixture, stirring continuously to avoid lumps.
3. Add red chili powder, salt, cumin-coriander powder, and jaggery powder. Stir everything together.
4. Close the pressure cooker lid and cook for 5 whistles.
5. Let the pressure release naturally, then transfer the cooked moong masala to a bowl. Serve hot with roti or rice.
