Fat if one of important nutrient in dairy nutrition. It has 2 roles, first, it is used as an energy source for animals and second, it is part of milk. Fat supplements are used to increase the energy density of diets. Fat digestion in cows are different from us and before understanding anything about fat in milk and bypass fat we have to understand how fat is get digested in the rumen. Fats are of 2 types (1) saturated fats (solid at room temperature) (2) unsaturated fat (liquid at room temperature). Most plant-based fats are unsaturated and present in the form of oils, which are called vegetable oil. Fats are made up of carbon and hydrogen. They are basically chains of carbon in which carbons are joined by single, double or triple bonds. In saturated fats (solid) all bonds are single bonds while in unsaturated fats (oils) there are some double bonds.
