Bengali Phoolkopir Dalna

During Phookopi (cauliflower) season, this delicious dish becomes a star veg dish at most Bengali celebrations. Fresh cauliflower and potatoes simmered in spices make this dish so flavorful and comforting.

It's easy to make, and its warm cozy flavors, are just perfect to go with hot fulko luchi or some fragrant pulao.

Recipe:

Ingredients:

• 1 medium/large cauliflower, cut into big florets
• 2 medium/large potatoes, cut into chunks
• ¼ cup mustard oil (for frying cauliflower)
• ½ tsp salt (for cauliflower)
• ½ tsp turmeric (for cauliflower)
• 2 tbsp mustard oil (fresh)
• 2 tbsp cashews, soaked for 30 minutes
• 2 tbsp melon seeds, soaked for 30 minutes
• 3 tbsp mustard oil (for cooking)
• 2 bay leaves
• 3 dried red chilies
• 1 tsp cumin seeds (jeera)
• 2 medium tomatoes, finely chopped
• 2 tbsp grated ginger
• 3-4 green chilies, slit
• ½ cup peas
• 1 tsp cumin powder (jeera powder)
• 1 tsp coriander powder
• 1½ tsp turmeric (haldi), divided
• 1 tsp red chili powder
• 2 tsp sugar (adjust to taste)
• 1½ tsp salt (adjust to taste)
• ½ tsp garam masala (plus more for finishing)
• 2 cups hot water
• 1 tbsp ghee

Method:

1. Fry the cauliflower:
Fry cauliflower florets in mustard oil with salt and turmeric until golden. Set aside.
2. Make cashew-melon paste:
Blend soaked cashews and melon seeds into a smooth paste. Set aside.
3. Cook the potatoes:
In fresh oil, add bay leaves, red chilies, and cumin. Add potatoes, salt, and turmeric, and fry until golden.
4. Add tomatoes and spices:
Add tomatoes, ginger, and green chilies, and cook until soft. Add peas, the cashew-melon paste, and dry spices. Sauté.
5. Finish cooking:
Add cauliflower and cook with the spices. Pour in hot water to make gravy, adjust seasoning, and simmer.
6. Finish with ghee and garam masala:
Stir in ghee and garam masala. Cook until vegetables are tender and gravy thickens.

Serve with luchis, pulao, or parathas.
