Recipe 1 – Ghee rice
Ingredients
biriyani rice (soak) – 250 gm
coconut milk – 1/2 cup
lemon juice – 1/2 lemon
water – 500 gm

Directions
1.Heat pressure cooker.
2.Roast rice in dalda.
3.Add hot water into it and sprinkle some lime juice
4.Pour coconut milk then, add whole masala and adequate salt.
5.Cover with lid and cook until 1 whistle.
6.Transfer the rice into the serving bowl
7.Heat a pan.
8.Saute onion in dalda with cashew nuts and kismis until brown colour. Set aside.
9.Decorate rice with fried onion, cashew nuts and kismis.

Recipe 2 - Chicken curry
Ingredients
chicken – 1 kg
onion - 2
shallots – 8 nos
green chilly – 5 nos
ginger – 1 1/2 spn
garlic – 1/ 1/2 spn
coriander powder – 2 spn
chilly powder – 2 spn
turmeric powder – 1 spn
chicken masala powder – 1 tbspn
coconut milk – 3 cup
salt - as required
tomato (cut) – 1 nos

1.Marinate the chicken with turmeric powder, chilly powder and salt.
2.Heat oil in a pan.
3.Fry chicken until brown colour.
4.Saute onion in oil until the raw taste changed, add shallots and saute well.
5.Add green chilly, ginger and garlic. Saute well.
6.Add tomato into it and saute well.
7.Add coriander powder then, saute until the raw taste changed.
8.Saute with chilly powder, turmeric powder and chicken masala powder.
9.Pour coconut milk and adequate salt. Then, mix well.
10.Add fried chicken, when the gravy boils. Cover with lid for 5 mins.


Recipe 3 - Fish curry
Ingredients
fish
chilly powder – 2 tbspn
turmeric powder – 1/4 spn
shallots – 5 cos
green chilly – 1 spn
ginger – 1 spn
garlic – 1 spn
tomato – 1 nos
fennu greek seed – 1/4 tspn
kudampuli (soak ) - 5 nos

To grind
1.Roast coconut until brown colour.
2.Add coriander powder, turmeric powder and chilly powder. Saute until raw taste changed.
3.Allow to cool and grind it.

Directions
1.Marinate the fish with chilly powder, turmeric powder and salt. Fry.
2.Heat oil in a pan.
3.Splutter the fennu greek seed.
4.Add shallots, green chilly, ginger and garlic. Saute well.
5.Add tomato and saute well.
6.Add grinned coconut into it.
7.Pour kudampuli with water and adequate salt.
8.Add fried fish and cover it with lid for about 5 mins.
