“Sourcing whiskey is not a crime,” says Dave Schmier, founder of Proof and Wood Ventures, in a conversation with Bourbon expert Tom Fischer at the Kentucky Bourbon Festival 2025. Schmier’s Proof & Wood portfolio includes Tumblin’ Dice, The Senator, The Representative, and a range of special limited editions.

With Proof & Wood, he Dave sources and ages barrels from MGP while also working with Whiskey House in Elizabethtown, KY to distill and create custom mashbills and traditional bourbon styles.

Schmier tells Fischer about his path from bartending and running a spirits marketing agency to co-founding Redemption and fueling the rye revival. Our interview with Schmier also dives into the distillery business — from starting a distillery to the marketing strategies, like his, that grow successful whiskey brands.

Among the highlights is Tumblin’ Dice Straight Rye finished in Laird’s Apple Brandy barrels (7 years + 1 year finish), showcasing the creative cask work behind Schmier’s releases.
