Cookie recipe: ( makes 24 )
1 1/2 cups white flour
1 cup whole rolled oats
1/2 tsp salt
1 tsp baking soda
1 tbsp cinnamon
1 banana
1 1/4 cup brown sugar
1/2 cup coconut oil ( softened )
1 tbsp apple cider vinegar
1 tbsp vanilla extract
1 cup oat milk
3/4 cup chocolate chips
1/2 cup chopped pecans

preheat oven to 350F

in a large bowl combine flour, oats, salt, baking soda and cinnamon. mix together and set aside

in another bowl mash a banana then combine brown sugar, vanilla extract, apple cider, and coconut oil. mix together really well

combine the wet ingredients into the dry bowl along with oat milk. fold together until about 80-90% combined, then mix in chocolate and pecans. finish combining.

using an ice cream scoop place batter onto a baking sheet with parchment paper or silicon mats. we put 6 cookies on each tray and the recipe makes 24!

bake for 15-17 minutes
