Smoked Bologna and Pimento Cheese Sandwich | BBQ&A | Southern Living

The Fox Brothers of Fox Bros Bar-B-Q in Atlanta recently joined Southern Living test kitchen director, Robby Melvin, for a delicious episode of BBQ&A where they made an unforgettable barbecue bologna sandwich. The secret ingredient? Pimento cheese!

The Fox Brothers explain their inspiration for the sandwich. If BBQ is comfort food, what’s more comforting than the taste of your youth—bologna? Especially when you top it with pimento cheese and Fritos.

The bologna is a pork and beef blend with a few seasonings. They pack the blend in a synthetic casing and then smoke the meat. To compliment the high quality bologna, they make a pimento cheese with cheddar, pepper jack, Duke’s mayonnaise, pimentos, pepper, and cayenne pepper. Once the pimento cheese is mixed together, they form patties with the cheese and top the bologna with the pimento cheese patties.

The bologna and pimento cheese cook on the grill. Once the pimento cheese has melted onto the smoked bologna, they stack two patties on a bun, add pickles and BQQ mustard sauce, and finish the sandwich with Fritos for the perfect texture.

For the Fox Brothers, BBQ is a labor of love. When the Fox Brothers began cooking BBQ in Atlanta, they did so to fill the void of Texas-style BBQ in the area. They started cooking for their friends and realized they had created something special. Their venture quickly turned into a successful business, where they’ve become known for having some of the best BBQ in Atlanta.

They opened their restaurant in 2007, right as the Great Recession took hold of the world. The restaurants around them started to close but their business picked up. They attribute the success to BBQ’s place on the menu as a comfort food, since people needed comfort food during the tough economic times.

Their business has continued to succeed, thanks to sandwiches like their Smoked Bologna and Pimento Cheese. It’s a bologna and cheese sandwich but not quite the one you grew up with.
