How to make Sechuan Button "Mille Feuille"?



Fried rice paper with Sechuan Button Syrup
1. Add the sugar to the mixer 2. Remove the greens from the Sechuan Buttons and add them to the sugar 3. Mix it! 4. Put some water in a pot 5. Add Sechuan sugar to the water and boil it to get syrup 6. Brush the syrup now onto the rice paper 7. Cut the paper into smaller pieces 8. Fry it! 9. Sprinkle the rice paper with some Sechuan Button sugar


Sechuan Button Cream
1. Put the milk in a pot and boil it 2. Put the egg yolk in a bowl 3. Add Sechuan Sugar and mix well 4. While stirring, add boiling milk 5. Put everything back in the pot and heat it up 6. Mix some corn flour with some water in a small bowl 7. Empty it while stirring into the cream in the pot and heat it up. 8. When the cream's thickened, put it in the fridge.


Sechuan Buttons
