Ingredients
• Peaches
o 6-8 peaches, peeled, cored, and sliced (5-6 cups)
o ¼ cup light or dark brown sugar
o 2 tablespoons unsalted butter, melted
o 2 tablespoons flour
o 1 teaspoon lemon juice
o 1 teaspoon vanilla extract
o 1 teaspoon ground cinnamon
• Topping
o ¾ cup flour
o ¾ cup old-fashioned rolled oats
o ¾ cup packed light or dark brown sugar
o ½ cup cold unsalted butter, cubed
o ¾ teaspoon baking powder
o ½ teaspoon ground cinnamon
o ¼ teaspoon ground nutmeg
o ½ teaspoon salt
• Whipped Cream
o 1 cup cold heavy whipping cream
o 2 tablespoons powdered sugar
o ½ teaspoon vanilla extract
Preparing the Recipe
1. Preheat the oven to 350 degrees F. Place the sliced peaches in a large bowl. (Frozen peaches work fine if fresh ones aren’t available.) Add the ¼ cup brown sugar, melted butter, flour, lemon juice, 1 teaspoon vanilla, and 1 teaspoon cinnamon. Toss to coat the peaches.
2. For the topping, in a separate bowl combine the flour, oats, ¾ cup brown sugar, cubed butter, baking powder, ½ teaspoon cinnamon, nutmeg, and salt. Using a pastry cutter (or your hands), form into a crumbly mixture. Refrigerate until ready to use.
3. Grease a 9x13 inch dish and pour in the peaches. Remove the topping mixture from the refrigerator and spread it over the peaches. Then bake for 35-45 minutes, until the top is golden and set.
4. To prepare the whipped cream, pour the cream, powdered sugar, and ½ teaspoon vanilla into a large chilled bowl. Whip on medium-high speed with an electric mixer for 3-4 minutes, until medium peaks form. Scoop onto the peach crisp servings.
