In this video, we discuss Raicilla, an agave-based spirit that hails from the Mexican states of Jalisco and Nayarit. Raicilla is distilled from different types of wild agaves and comes in two categories - coastal and mountainous. The production of Raisia is difficult to scale as the agaves are wild and cannot be cultivated regularly. We also learn about the history of Raicilla, how it has been around for hundreds of years, and how the Spanish conquest led to a tax on all local alcohols, leading the farmers to lie and say they were using agave roots, which is where the name ‘Raisia’ (meaning ‘little root’ in Spanish) comes from.
