To make this you will need:

For the crispy vegan chicken:
270gr vegan chicken of choice (or tofu/soy curls/any other replacement you like)
60gr all-purpose flour
40gr cornstarch
1tsp baking powder
1/2tsp salt
1/4tsp pepper
1tsp vegan poultry seasoning
120ml water
oil to fry

For the sticky glaze:
2tbsp oil
2 garlic cloves
1tsp fresh ginger
1tsp chili flakes
150ml fresh orange juice
2tbsp soy sauce
1tbsp rice vinegar
1tbsp sesame oil
1tbsp brown sugar
1tbsp cornstarch + 1tbsp water

First cut your vegan chicken replacement into bite sized pieces. Mix rest of the ingredients (except the oil for frying) for the crispy vegan chicken in a bowl to make a wet batter. Add the vegan chicken pieces in and mix to coat them all. Heat oil in a pan to 180C (350F). I don't own a thermometer so I just add one of the pieces in the oil to see if it's hot enough. And if bubbles start to form around the piece, that means the oil is hot enough and I can add all of the pieces in. Fry them for 2-3 minutes until golden brown and crispy. I did mine in 2 batches to not let them stick together too much. Let the pieces leak out on kitchen paper towel after they come out of the oil.

For the glaze, add the 2tbsp oil to a pan and heat this. Grate the garlic and ginger and add this to the hot oiled pan with the chili flakes. Cook for 1 minute until fragrant. In the meantime mix the rest of the ingredients for the glaze (except the cornstarch +water). Add the sauce to the pan and bring to a simmer. Let this simmer for 2 minutes. In the meantime mix your cornstarch with the water. Add this cornstarch slurry to the sauce and mix this in immediately while pouring it in. Heat the sauce for another minute until it turns into a thick glaze.

Once you're ready to serve, add the crispy vegan chicken to the glaze and mix to combine. Enjoy with some rice or noodles or just eat this as a snack :)
