3 QUICK & EASY VEGETARIAN PASTA RECIPES | LUKE CATLEUGH MEALS

I hope you are all doing well. Welcome back to my channel and to a very delicious 3 quick and easy pasta recipe video. This is a firm favourite to film.

I have written all the recipes below, but any questions leave them in the comments and I will get back to you.

5 PASTA RECIPE VIDEO:

Butternut Squash Spaghetti:
• 3/4tbsp olive oil
• 1 small butternut squash, peeled & chopped
• 1 white onion, diced
• 3 garlic cloves
• 10-12 sage leaves
• 50g cashews
• 1 vegetable stock cube
• 450g spaghetti/linguine/bucatini
• Salt & pepper
• Parmesan to taste

Creamy Leek Pasta Bake:
• 3 large leeks
• 300ml dry white wine or vermouth
• 200ml cold water
• 25g unsalted butter
• 25g plain flour
• 500ml whole milk
• 500g penne or pasta of your choice
• 1tbsp Dijon mustard
• 300g cheddar or cheese of your choice
• 3tbsp panko breadcrumbs

Cacio e Pepe Carbonara:
• 3 egg yolks
• 75g pecorino/grana Padano/Parmesan plus extra to garnish
• 200g bucatini/spaghetti
• 3tsp black pepper
• 1tbsp extra virgin olive oil
• 50ml pasta water
