Maghmour is one of the first platters I prepared as a teen. The main theme is simple: eggplants and tomatoes, with onions and garlic in olive oil - of course! Adding chickpeas is popular in Lebanon, making the dish even more nutritious. The better-known Greek Moussaka is a distant relative that it is richer and more sophisticated - but heavier on the stomach. Essentially, Maghmour is a vegan Moussaka. It is rich in vitamins, antioxidants and dietary fiber. It goes perfectly well with vegetarian, vegan and gluten-free diets.
