You will most likely not use all of the fillings and ganache. So it you use roughly half of the fillings and use 2 cakes the calorie amount for the cake is roughly 13000 kCal. If you divide the cake into 16 pieces that would make each piece around 800 kCal.

I made a few changes to Matts recipe. I used butter instead of oil in the cake and milk instead of buttermilk.

Since the recipe consists of a Cake base, Chocolate cremeux, French buttercream, chocolate ganache and a chocolate drip below is the total amount of ingredients needed to make the entire cake:

• Milk: 473 (313.33 g + 160g)
• Butter: 706.67 g (196.67 g + 330 g + 85 g + 95 g)
• Heavy cream: 800 g (160 g + 640 g)
• Egg yolks: 205 g (65 g + 140 g)
• Dark chocolate: 985 g (185 g + 640 g + 160 g)
• Milk chocolate: 175 g
• A pinch of sea salt: As needed
• Glucose or honey: 40 g
• Sour cream: 220 g
