Cold Smoked Bacon

Ingredients:
6lbs Pork Belly (skin on), cut in half
Kosher Salt (2.5% of weight)
Brown Sugar (1% of weight)
Pink Curing Salt (NOT pink hymilayan salt) (0.25% of weight)

Prep:
Rinse pork belly with cold water and then pat dry
Weigh each piece of pork separately (in grams) to get an accurate weight of each piece
Based on the weight, you will weigh out your kosher salt (2.5%), brown sugar (1%) and pink curing salt (0.25%) for each piece separately
Combine brown sugar, kosher salt and pink curing salt together separtely and mix well to make the cure
Pour ¼ of the cure into the bottom of a lipped pan
Place one piece of pork belly, skin side down, onto the cure mixture
Add the remaining ¾ cure mixture, ensuring all of the meat is covered
Repeat this process to both pieces
Put the pieces onto a wire rack and place the wire rack into a lipped pan
Leaving it uncovered, place it into a fridge for 5-7 days, tending to it every day to drain the pan of any liquid, until there is no more liquid accumulating
Once there is no more liquid coming from the meat, take the pan out of the fridge and rinse each piece under cold water, rinsing off the remaining cure and pat dry
Transfer the pork belly back onto a wire rack and drip pan and return it to the fridge to air dry for another 24 hours
Your pork belly is now ready for your cold smoker

Cooking:
Pit Boss Apple Blend pellets
A-Maze-N Smoke Tube
Cold smoking cabinet or any kind of smoking chamber
Cold smoke for 6 hours, keeping the temperature of the cabinet under 18°C (65°F)
Remove the pieces of bacon from the smoker and wrap in plastic wrap or vacuum seal them and let them rest for 2-7 days!
Cut each piece into slices, cook and eat!

MY ADJUSTMENTS I WILL MAKE FOR NEXT TIME
Decrease Kosher Salt to 2%
Increase Brown Sugar to 1.5%
Decrease Smoking Time to 6-8 hours

Serve as a breakfast item with some eggs, lunch in a sandwich or dinner on a burger.
