Το σιτάρι είναι ένα από τα πρώτα φυτά που καλλιέργησε ο άνθρωπος και σήμερα αποτελεί το δεύτερο σε συγκομιδή δημητριακό μετά από τον αραβόσιτο (στην Ελλάδα είναι πρώτο σε καλλιέργεια).

Στην Ελλάδα καλλιεργούνται δύο είδη: το Τriticum durum ή σκληρό σιτάρι και χρησιμοποιείται κυρίως στην μακαρονοποιία και το Triticum aestivum ή μαλακό σιτάρι που χρησιμοποιείται για την παρασκευή ψωμιού.

Ο αλωνισμός του γίνεται συνήθως το καλοκαίρι από τον Ιούνιο μέχρι και τον Ιούλιο και γίνεται όταν το ενδοσπέρμιο είναι σκληρό και έχει υγρασία 25%-35%. Στις μέρες μας ο θεριζοαλωνισμός του ξεκινάει περίπου 7 ημέρες αργότερα, ώστε να πέσει η υγρασία ακόμα περισσότερο, καθώς όσο μεγαλύτερη είναι, δυσκολεύει την όλη διαδικασία.

Η αποθήκευση του σπόρου πρέπει να γίνεται όταν η υγρασία είναι κάτω του 14% και γίνεται μέσα σε ειδικά σιλό, σε σακιά ή ακόμα και χύμα μέσα σε αποθήκες.

Wheat is one of the first plants cultivated by man and today it's the second most harvested cereal after maize (in Greece it's the most harvested cereal).

There are two cultivated varieties in Greece: Triticum durum (hard wheat), which is used for the production of pasta, and triticum aestivum (common wheat), which is used for the production of bread.

Harvesting takes place in the summer, between June and July, when the endosperm is hard and its humidity is between 25 and 35%. Nowadays, harvesting starts about 7 days earlier to allow the humidity to fall even lower, because high humidity values cause problems in the process.

The grains are stored when the humidity falls under 14% and it is done in special silos, in sacks and in warehouses (in bulk).
