Vegan French Onion Soup:

INGREDIENTS:
4 yellow onions
1/4 cup vegan butter
1 tsp coconut sugar
4 cloves garlic
3/4 cup red cooking wine
Thyme to taste
Salt to taste
Black pepper to taste
3 tbs flour
8 cups of vegetable stock
1 baguette
Vegan mozzarella cheese

Chipotle Maple Glazed Tofu Sandwich:

Ingredients:
16 oz of super firm tofu
1/2 cup vegetable broth
1/4 cup coco aminos or soy sauce
3 tbs adobo sauce
2 tbs maple syrup
1 tsp liquid smoke
1 tbs nutritional yeast
1-2 tbs apple cider vinegar
1 tbs olive oil
Smoke paprika to taste
Onion powder to taste
Coriander to taste
Black pepper to taste
2 slices of vegan sourdough bread
Pickles
Red onion
Roasted red pepper (from jar)
Vegan mayo
Gaucamole

Vegan Baked Ziti:
1 Ib rigatoni
Vegan mozzarella
Freshly chopped parsley
2 tbs avocado oil

Homemade marinara sauce:
1 red onion
1 large carrot
6 cloves of garlic
2 tbs tomato paste
Salt to taste
Fennel seeds to taste
Black pepper to taste
Italian seasoning to taste
2 28oz of canned san marzino tomatoes
1 Ib of Vegan ground meat (I use Abbots)

Vegan Ricotta cheese:
2 cups almond flour
3/4 water
1 tbs nutritional yeast
1/2 lemon juice
Pinch of salt
1/8 tsp garlic powder
