Roasted Garlic Chicken Alfredo Bread

Ingredients

Roasted Garlic
1 Garlic bulb
Olive oil (for drizzling)

Garlic Butter
1/2 stick Butter (melted)
Roasted garlic (from above)

Alfredo Sauce
8 oz Parmesan Cheese
1 2/3 cups Heavy Cream
5 tbsp Butter
Salt and Pepper (to taste)

Chicken
Mesquite Chicken (frozen, thawed)
Bread and Toppings

1 loaf Italian Bread
Red onion (optional)
Mozzarella Cheese
Italian seasoning (optional)

Roast Garlic
Preheat the oven to 400 degrees. Remove all but one layer of the loose papery skin from the garlic bulb, keeping the bulb intact. Cut off the top of the bulb to expose the tops of the cloves. Place the garlic bulb, cut side up, on a double layer of foil. Drizzle olive oil over the bulb, then rub it to coat the entire bulb with oil. Bring the foil sides up to form a loose package around the garlic and seal it. Place the foil package in a small baking dish or on a baking sheet. Roast for 45 minutes.

Melt about half a stick of butter and mix in the roasted garlic to spread on the bread.

Alfredo Sauce
8 oz Parmesan Cheese
1 2/3 cups Heavy Cream
5 tbsp Butter
Salt and Pepper to taste

In a skillet, melt the butter. Add the cream and cheese. Whisk well and simmer until the cheese is melted.

Prepare Chicken - I used Mesquite Chicken from the frozen section, thawed in the microwave.

Slice Italian bread in half, spread the roasted garlic butter on both halves, then add the Alfredo Sauce. Place the chicken on next, top with more Alfredo sauce, red onion (optional), mozzarella cheese, and Italian seasoning (optional).

Bake at 350 degrees for about 15 minutes or until bubbly and golden brown.
