Bruschetta Chicken

Inactive Time: 30 minutes
Total Time: 60 minutes
Yields: 4 large or 8 small servings

Ingredients:
2 pounds boneless, skinless chicken breasts (sliced thin if desired) (Meat)
1 cup Italian salad dressing (Aisle 2)
4 vine ripened tomatoes, seeded and diced (Produce)
½ cup diced red onion (Produce)
2 tsp. minced garlic (Produce)
2oz. chopped fresh basil (Produce)
¼ cup balsamic vinegar (Aisle 2)
Sliced mozzarella cheese (Dairy)


Directions:
Place chicken in a Ziploc bag and pour in salad dressing. Sprinkle with salt and pepper before sealing and placing in fridge for at least 30 minutes, or overnight. While chicken marinates, mix together the tomatoes, onion, garlic, basil, and balsamic vinegar. Season with salt and pepper, to taste before setting aside. Grill chicken over medium heat and cook for 7-10 minutes per side, or until chicken is cooked through (cooking time will be shortened for thin cut breasts). When chicken is nearly ready, top with a slice of mozzarella, followed by a spoonful of bruschetta, and finished with another piece of cheese. Before serving top with balsamic glaze, if desired, and additional bruschetta.
