SUSHI SUGITA - ALL THE BEAUTY OF JAPAN!

If you’d like to wish me something good, wish me that I’ll be able to sit in front of Chef Takaaki Sugita 4 times a year from today till the day I die.

No less because I’d like to be there in every season, and no more, because I want to preserve this feeling of excitement (and butterflies in my tummy) before going to Sugita.

This video is longer than normal because I wanted to let you feel and appreciate what it means to sit in front of the greatest sushi masters of our time.

For me is like enjoying all the art and beauty of Japan in a few hours (this meal lasted almost 4 hours).

Sugita san, most of the time with eyes closed, moves like a tea ceremony master repairing the précised and measured moves time after time.

The way he carves (and reconstruct) the fish reminds you of a sculpturer and the beauty of his Nigiri matches the greatest Japanese drawings.

His eyes are closed, but you know that the level of his concentration belongs to Martial arts dojo rather than a restaurant. You can’t really tell if he is a samurai or a Ninja.

And during all this time, while feeding his guests with the most delicious Sushi and Otsumami, he doesn’t stop to entertain them like a Geisha.

My wish to you is that one day you will be fortunate enough to enjoy Sugita san yourself.
