Garam Masala Thool
Ingredients:
Coriander Seeds - 1/2 Cup (Buy: https://amzn.to/2sP7i1Z)

Green Cardamom - 2 Tbsp (Buy: https://amzn.to/2U5Xxrn)
Large Black Cardamom - 8 Nos. (Buy: https://amzn.to/2V4OXd6)

Nutmeg - 1 No.
Pepper Corns - 1 Tbsp (Buy: https://amzn.to/2RPGoRp)

Method:
1. Roast the coriander seeds until they turn colour and release aroma.
2. Transfer it to a plate and let it cool.
3. Roast the cumin for 2 minutes on medium flame and transfer it to the plate.
4. Now add cinnamon, cloves, green cardamom, black cardamom, star anise, nutmeg, peppercorns, mace and bay leaf to the roasting pan.
5. Roast all the ingredients for 5 minutes until aroma is released.
6. Now transfer them to a plate and let them cool completely.
7. Transfer them to a mixer jar and ground them to powder.
8. Aromatic Garam masala is ready.
9. Store it in an air tight container for longer shelf life.

Potato Roast

Mustard Seeds - 1/4 tsp (Buy: https://amzn.to/2GUoDKd)
Asafoetida - 1/4 tsp (Buy: https://amzn.to/313n0Dm)
Potatos - 4 nos
Salt - 1 tsp (Buy: https://amzn.to/2vg124l)
Turmeric Powder - 1/4 tsp (Buy: https://amzn.to/2RC4fm4)
Kashmiri Red Chilli Powder - 1/2 tsp (Buy: https://amzn.to/2GgLsrp)
Ground Garam Masala thool - 1 tsp

Method:
1. Heat Oil in a pan.
2. Add mustard seeds and asadoetida powder and let it splatter.
3. Add the peeled and chopped potatoes.
4. Close the pan and let it cook for 5 mins.
5. Once the potatoes are half done, add turmeric powder and salt.
6. Toss it a bit and let it cook for another 5 mins. Keep the pan closed.
7. Finally add the kashmiri chilli powder and the ground garam masala powder.
8. Roast the potatoes for another 5 mins.
9. Potato is done.
