Chicken batter:
Equal parts crushed regular pork rhinds, spicy pork rhinds, parm cheese and oat fiber. Mix together with 1 tsp salt and pepper. Dip chicken pieces in beaten egg and coat in batter. Fry chicken 3-6 min depending on the size at 350 degrees. Chicken thighs retain the most moisture.

Sauce recipe:

1 tsp oil of choice, needs to tolerate high heat
1/4 tsp chili flakes or crushed red pepper
1/4 cup fresh squeezed orange juice, about 1 orange
1 tablespoon minced garlic
1/4 cup sweetener blend
1 tsp chopped ginger or 1 tablespoon fresh squeezed ginger
1/4 cup white vinegar
2 tablespoons soy sauce
1/4 to 1/2 tsp xanthum gum to desired thickness
1 tsp sesame oil

How to make the sauce:

In a skillet, add veg. oil to pan and add chili flakes on medium heat. Add garlic and ginger and saute for 30 seconds to 1 min. Add sweetener and saute for 30 seconds. Add orange juice and stir, add vinegar and stir, and add soy sauce and stir. Saute for a couple of min. Add anthem gum, 1/4 tsp first and see if that is enough to make it a syrup consistency. If to runny add a tiny bit more. It doesn’t take much. Add chicken to sauce. Top with sesame oil and stir. Enjoy!

1 1/2 cups erythritol
2 cups xylitol
2 tablespoons stevia
