Fish Sambar Recipe

Ingredients:

For the Sambar Masala

2 tbsp coriander seeds

1 tbsp cumin seeds

1 tbsp fenugreek seeds

4-5 dried green chilies

1/2 tsp turmeric powder

2 tbsp grated coconut (optional)


For the Sambar

500g fish (cut into pieces)

1 cup tamarind water (soaked and extracted from a lemon-sized ball of tamarind)

2 tbsp sambar powder (store-bought or homemade)



Curry leaves

Coriander leaves (for garnish)

Salt to taste

3 tbsp oil


Preparation:

Step 1: Roast and Grind Masala

1. Dry roast coriander seeds, cumin seeds, fenugreek seeds, green chilies, and grated coconut., tomato , tamarind


2. Grind the roasted ingredients into a fine paste with some water.



Step 2: Cook Sambar Base

1. Heat oil in a deep pan, add sasive ,curry leaves


2. Add the masala and cook until they soften.

and salt. Bring it to a boil.



Step 3: Add Fish and Dal

1. Add the ground masala paste


2. Let it simmer for 5-7 minutes.



Step 4: Cook Fish

1. Gently add the fish pieces and cook for another 7-10 minutes, ensuring the fish doesn’t break.


2. Taste and adjust salt and spices.



Step 5: Garnish and Serve

1. Garnish with coriander leaves.


2. Serve hot with steamed rice or dosas.

Chicken fry:

Ingredients:

500g chicken (cut into small pieces)

2 tbsp oil

1 large onion (sliced)

2 tomatoes (chopped)

1 tsp ginger-garlic paste

1/2 tsp turmeric powder

1 tsp red chili powder

1 tsp coriander powder

1/2 tsp garam masala

Salt to taste

Curry leaves

Fresh coriander leaves (chopped, for garnish)


Optional Ingredients:

2 green chilies (slit)

1 tsp lemon juice


Instructions:

1. Marinate Chicken:
Mix the chicken with the paste of corriander leaves pudina leaves green chilli tomato onion garlic, ginger Let it rest for 30 minutes.


2. Cook Chicken:
Heat oil in a pan. Add onions. ,bay leaf Sauté until golden brown.
Add chilli garlic paste(optional)


3. Spice It Up:
Add turmeric, chili powder, coriander powder, and salt. Mix well.
Add the marinated chicken and stir. Cook on medium heat until the chicken is fully cooked.


4. Let the mixture become dry and then garnish with coriander leaves
