Fried Chicken Sandwich

4-6 medium sized boneless chicken breasts
2 large eggs
2 cups self-rising flour
2 packets Hidden Valley Ranch mix (4 Tablespoons)
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon paprika
Mayonnaise, dill pickle slices, tomato slices, lettuce leaves (for dressing the sandwiches)

Using a large serrated-edged knife, slice each chicken breast horizontally into two cutlets.  Place each cutlet in a plastic baggie and gently pound to approximately 1/4 inch thickness. Try to make each cutlet a uniform thickness so they fry evenly. 

In a pie plate or other medium size bowl, beat the two large eggs until well beaten. Set aside.

In another dish, stir together the flour, ranch dressing mix, salt, pepper, and paprika. Set aside.

Place a piece of parchment paper on a cookie sheet to hold your breaded chicken breast while they are waiting to be fried. 

Dip both sides of one chicken cutlet in the beaten egg, coating well. Allow access to mostly drip off. Then dredge in the flour mixture, coating well. Place back in the beaten egg, coating it well again. Then, dredge completely a second time in the flour mixture. Place on the parchment paper lined cookie sheet while you repeat this with each chicken cutlet.  Allow the dredged chicken cutlets to rest on the cookie sheet for at least 10 minutes. 

While the chicken is resting, place about half an inch of light oil in a large skillet and begin heating over medium heat. Test the oil to see if it’s hot enough to begin frying. Place your chicken breast in the hot oil and fry for exactly 3 minutes on the first side. Check to see if it’s golden brown. If it is, flip it to the other side. If it is not, fry it only ONE more minute, then flip it over.  Do not overcook the chicken. Once you have flipped it to the second side, fry for exactly 3 minutes. Check for doneness and add no more than ONE more minute if it’s not golden brown enough. (If you want, you can check with a meat thermometer for doneness. It should register 160 to 165°. )

Serve on buns as a sandwich with toppings of your choice; or just serve on a plate as a fried chicken breast with vegetables and or a salad on the side.
